Salmon en Papillote

I'm cooking our salmon tonight in parchment bags (en papillote). This is one of my favorite (and one of the easiest) ways to cook fish. You can wrap and tie sheet parchment, but I like to find these little pre-made parchment bags…so easy for Airstream cooking. Here's a view inside the bag:

I put in some cut fresh green beans I got at the farmers market today, then the salmon, then a couple slices of lemon, a tablespoon of butter, some halved sun gold tomatoes (also from the market today), and a little garlic and olive oil. Seal it up, cook it in the oven at 375 degrees for 10-12 minutes.

  2. It’s super easy, Kim. I love how it comes out, every time. So pretty, colorful, healthy, easy. Looks gorgeous on the plate, too. 🙂 Halibut is especially good this way. -L
