Patience

Kevin is the most patient marshmallow roaster I know.  He holds them just the right amount over the flame, slowly turning them so they develop that perfectly golden exterior.  The interior gets gooier and gooier, and pretty soon they start to look like they're going to drop off the stick and that's when he slowly pulls them off and eats 'em.

And here's me:  Marshmallows catch on fire, I blow 'em out and put 'em back. Repeat several times, then eat. The marshmallows have that crispy charred outside while the inside is still a little cold. I defend that my instant gratification method makes delicious roasted marshmallows (or s'mores), but I notice more often I have Kevin to cook my marshmallows for me.
