Squash Fettucine Noodles with Pesto and Shrimp

Thought I'd share what I made for dinner last night, because it was easy, good, and healthy. 

I used my potato peeler to make fettucine-sized "noodles" out of a zucchini and a yellow squash (peeling just down to the seedy part and then stopping…well, except for that piece or two at the bottom of the phot…whatever):

Then I put all that into this cool little silicone steamer dealie (called FoodPod by Fusion Brands) that I keep in the Airstream (it squishes down into nothing) and plopped it into a pot of boiling water for a few minutes:

While that was going on, I mixed up some pesto with some chopped cilantro and fresh diced yellow and red tomatoes:

When the squash noodles were done, I tossed 'em in with the pesto and threw in a few shrimp. Delicious!

The squash worked great as a substitute for pasta. I'll use this trick again, for sure.

  1. Loving the food pod thingy! The website says they’re sold out but, I’ll keep checking because I think I have to have one. Your dinner looks good too 🙂

  2. I do something similar to this but I use a julienne peeler to make spaghetti sized noodles. I use carrots or any kind of squash. It is a great way to up the veggies and ditch the empty carbs. I’ll have to check out the pod thing too!

  3. Diane: I might have first tried the julienne peeler, but realized I didn’t have one in the Airstream. Now it’s on the list! 🙂
